Consolidate S2I scripts - single complete script only

- Merge deploy-s2i-complete.sh functionality into deploy-s2i.sh
- Remove duplicate deploy-s2i-complete.sh script
- Update README.md to reference single S2I script
- Always complete deployment - no simple vs complete variants
- Maintain self-service approach with all required resources
- Clean repository with only essential scripts
